Potato Pancakes with Salmon

Got leftover boiled potatoes? Then turn them into delicious potato pancakes topped with salmon!
Ingredients
- 500 g pre‑cooked potatoes
- 2 Eggs
- 200 g spelt whole‑grain flour
- 400 ml milk (3.5% fat)
- Salt
- freshly ground pepper
- nutmeg
- 250 g smoked salmon
- 3 tbsp Rapeseed oil
- 2 tbsp chive rolls

Peel and grate the potatoes. Whisk together the eggs, flour, and milk; fold in the grated potatoes and season with salt, pepper, and freshly grated nutmeg. Dice the salmon and stir it into the batter.

Heat the oil in a pan and pour 1–2 tablespoons of the potato mixture into the pan, cooking until golden brown on each side. Remove, drain on kitchen paper, plate, and garnish with chive rolls before serving.
