Potato Pancakes with Apple Sauce and Lingonberries

- 800 g starchy potatoes
- 1 small onion
- 2 Eggs
- 4 tbsp flour
- a pinch of salt
- Pepper (freshly ground)
- nutmeg (freshly grated)','4 tbsp vegetable oil (for frying)','lingonberries (jar)','apple sauce (jar)

Wash, peel and grate the potatoes finely. Place them in a sieve, squeeze out excess liquid, and let sit briefly to allow starch to settle at the bottom. Carefully pour off the liquid and mix the remaining starch with the grated potatoes. Peel and grate the onion, then squeeze out its juice.

Beat the eggs with flour and onion, then combine with the potato mixture and season with salt, pepper, and nutmeg.

Heat a little oil in a pan and drop spoonfuls of the batter into the hot fat. Flatten them and fry on both sides for 4-5 minutes until golden brown. Add more oil if needed. Remove, drain on kitchen paper, and keep warm at 80°C (180°F) in the oven with top and bottom heat. Repeat with the remaining batter.
