Potato Pancakes

Ingredients

  • 1 kg potatoes
  • Salt
  • freshly ground pepper
  • nutmeg
  • 1 tbsp freshly chopped parsley
  • 4 tbsp olive oil
  • parsley

Instructions

    Peel, wash, and grate the potatoes coarsely. Season with salt, pepper, and nutmeg.

    Coat a large pan with a little olive oil. Spread ¼ of the grated potatoes in a 1–1.5 cm thick layer and press lightly.

    Sauté briefly, then reduce heat and cover to cook for about 15 minutes.

  4. 4.

    Flip by sliding onto a plate. Lighten the pan with remaining oil, drop the pancake back in, and finish cooking. Keep finished pancakes warm in an oven at 80°C.

    Serve garnished with parsley.
