Mediterranean Paella

Ingredients
- 500 g mussels
- 2 onions and garlic cloves each
- 4 tomatoes and chicken thighs each
- salt, pepper
- 8 tbsp olive oil
- 200 g pre-cooked frozen squid
- 250 g Risotto rice
- 125 ml meat broth
- 250 ml white wine
- 1 can saffron
- 100 g frozen peas
- 8 scampi
- 75 g black olives
- 1 lemon

Brush mussels under running water, remove the beard and discard damaged or opened ones. Peel onions and garlic cloves. Dice onions into eighths, finely dice garlic. Blanch tomatoes, peel, quarter and seed them.

Wash chicken thighs, pat dry, rub with salt and pepper. Heat 4 tablespoons of oil in a pan and brown the chicken thighs all around for about 10 minutes. Add onions, garlic and tomatoes, simmer together for about 5 minutes. Then add mussels and thawed squid, simmer for another 5 minutes.

Heat remaining oil in a large paella pan. Sauté risotto rice until translucent. Add broth and white wine. Stir in saffron evenly and bring the rice to a boil. Then add chicken thighs with mussels, squid and tomato quarters as well as peas and scampi.

Bake the paella in a preheated oven at 180°C for about 20 minutes, until all liquid is absorbed. Taste again if needed and serve garnished with olives and lemon wedges.
