Ingredients
- 500 g waxy potatoes
- 1 Shallot
- 1 Garlic clove
- 2 egg yolks
- 2 tbsp heavy cream
- 2 tbsp grated Gouda cheese
- 2 tbsp potato starch
- Salt
- black pepper
- nutmeg

If needed, lightly oil the muffin tins. Peel and grate the potatoes finely. Peel and finely chop the shallot and garlic.

Mix the grated potatoes with the chopped shallot and garlic in a bowl, then add the egg yolks, cream, cheese, and potato starch. The batter should be relatively liquid. Season generously with salt, pepper, and nutmeg, and fill the muffin tins.

Bake the potato muffins in a preheated oven at 200°C (180°C fan; gas: level 3) for about 35 minutes until golden brown.
