Ingredients
- 1 kg sweet potatoes
- 70 g red lentils
- 1 bunch spring onions
- 1 Garlic clove
- 2 tbsp fruit vinegar
- 0.5 tsp mustard
- Salt
- Pepper (freshly ground)
- 4 tbsp sprouting oil
Instructions

Wash the potatoes and cook for about 25 minutes. Drain, let steam off, peel and slice into not-too-thin rounds.

Rinse the lentils thoroughly under running water in a sieve, then boil in salted water for about 5 minutes. Drain and let them drip dry.

Wash and trim the spring onions, cut into fine rings. Peel and finely chop the garlic. Combine all ingredients together.
