Potato Lentil Rösti

Ingredients

  • 800 g new potatoes
  • 250 g red lentils
  • 150 g Feta
  • 2 Spring Onions
  • 100 g rolled oats
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 200 g mixed salad greens
  • 0.5 bunch radishes
  • 3 tbsp Lemon juice
  • 1 tsp Mustard
  • 3 tbsp oil
  • 3 tbsp oil for frying

Instructions

    Peel and grate the potatoes coarsely. Simmer the lentils in a little water for 10 minutes, drain and let cool slightly before mixing into the potato grating. Dice the feta. Wash, trim, and slice the spring onions into thin rings. Combine all with the potato mixture, seasoning with salt, pepper, and nutmeg.

    Heat a small amount of oil in a pan over medium heat. For each rösti, place 1 tbsp of batter into the pan, press flat, and cook until golden brown on one side before flipping. Keep finished rösti warm in an oven at 70 °C.
