Lamb and Vegetable Skewers

These lamb and vegetable skewers are quickly prepared in a grill pan and guaranteed to be delicious!

Ingredients

  • 4 cloves garlic
  • 0.5 handful coriander
  • 60 ml olive oil
  • 1 tbsp balsamic vinegar
  • 1 piece cinnamon stick
  • Pepper
  • 600 g lamb meat (from the leg)
  • 1 large vegetable onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • Salt

    Peel and halve the garlic cloves. Rinse the coriander, shake dry and pluck the leaves. Whisk the oil with the vinegar, add the garlic, cinnamon stick and coriander. Grind fresh pepper into the mixture.

    Wash the meat, pat dry and cut into cubes. Marinate in the sauce, cover and refrigerate for at least 2 hours, preferably overnight.

    Trim the onion, halve it and cut into large cubes. Wash the bell peppers, halve them, remove seeds and white membranes. Dice to match the size of the onions.

    Remove the meat cubes from the marinate. Alternate threading a piece of meat with a pepper cube and an onion cube onto skewer sticks.

    Heat a grill pan and cook the skewers, turning every few minutes, for 6-8 minutes.

    Arrange the lamb and vegetable skewers on a plate, season the skewers with salt and serve with flatbread and tzatziki if desired.
