Grilled Meat Skewers with Vegetables

Ingredients

  • 800 g pork tenderloin (trimmed)
  • 2 Zucchini
  • 2 bell peppers (yellow and red)
  • 2 Garlic cloves
  • 1 sprig rosemary
  • 2 stems thyme
  • 60 ml olive oil
  • Sea salt
  • ground pepper

Instructions

    Cut the meat into about 3 cm cubes. Trim the ends of the washed zucchini and slice them into thick (about 4-5 mm) rounds. Halve the washed bell peppers, remove seeds and white membranes with a small knife, and cut into pieces roughly 3 cm long.

    Thread the vegetables alternately with the meat onto skewers (around 8 sticks) and place side by side in a shallow dish. For marinating, peel and finely chop the garlic cloves. Strip rosemary and thyme leaves and finely chop them together. Add the herbs to the oil and mix. Brush the meat skewers all over with this mixture. Turn once and use up all the oil.

    Cover with plastic wrap and let sit in the refrigerator for about 1 hour.

    Remove the skewers from the oil and drain, then grill for about 10 minutes. Rotate evenly and brush with the seasoned oil sauce midway.

    Finally season the grilled meat skewers with vegetables with salt and pepper and serve.
