Potato-Leek Puree

Ingredients
- 800 g waxy potatoes
- Salt
- 1 stalk leek
- 2 tbsp olive oil
- 2 tbsp butter
- 250 ml lukewarm milk
- Pepper (freshly ground)
- Nutmeg (freshly grated)

Peel, wash and boil the potatoes in salted water for about 30 minutes.

Meanwhile, cut the leek lengthwise in half, rinse thoroughly, trim, and slice into thin strips. Heat oil in a pan and sauté the leeks until golden yellow. Remove and drain on kitchen paper.

Drain the potatoes, let them steam dry, then mash with a potato masher. Add butter and milk to make a smooth purée. Fold in the leeks and season with salt, pepper, and a pinch of nutmeg.
