Potato Herb Patties

Ingredients

  • 1 red bell pepper
  • 2 stalks basil
  • 2 stalks Parsley
  • 1 stalk thyme
  • 600 g mostly waxy potatoes
  • 2 egg yolks
  • 3 tsp potato starch (depending on potato variety)
  • Salt
  • freshly grated nutmeg
  • Vegetable oil for frying
  • 4 stalks thyme for garnish

Instructions

    Wash the pepper, halve it, remove seeds and dice into small cubes. Wash the herbs, shake off excess water, pluck leaves and roughly chop. Peel and grate the potatoes. Wrap in a damp kitchen towel and squeeze out excess moisture. Let the potato juice sit briefly, then drain so that the released starch remains at the bottom of the bowl. Mix grated potatoes with egg yolks and potato starch, season with salt and nutmeg.

    Form small mounds of the mixture into a pan (preferably non-stick) in hot oil, flatten them, and fry 2-3 minutes until golden brown. Flip and cook another 2-3 minutes until golden brown. Drain on kitchen paper. Serve garnished with thyme.
