Ingredients

  • 800 g new potatoes
  • Sea salt
  • 250 g Cherry Tomatoes
  • 100 g black olives (pitted)
  • 1 handful rocket
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 1 tbsp Lemon Juice
  • Pepper (freshly ground)
  • 50 g grated cheese (e.g. Pecorino)

Instructions

    Wash the potatoes and halve them. Cook in salted water for about 20 minutes until tender.

    Preheat the oven to 200°C with both fan and top heating.

    Wash the tomatoes and halve them. Drain the olives. Wash, drain and clean the rocket. Peel the garlic and cut into thin slices. Combine all prepared ingredients with the drained potatoes, olive oil and lemon juice, season with salt and pepper, and pour into a baking dish. Bake in the oven for about 15 minutes until golden.
