Ingredients

  • 600 g potatoes (mostly waxy)
  • Salt
  • Pepper (freshly ground)
  • 250 ml sour cream
  • 3 eggs
  • paprika powder
  • 0.25 bunch chives
  • fat (for greasing the dish)

Instructions

    Cook the potatoes as whole boiled potatoes, peel them, let cool, and slice thinly.

    Preheat the oven to 200°C. Grease a baking dish with fat.

    Whisk the sour cream with the eggs and season strongly. Layer the sliced potatoes alternately with the egg‑cream mixture in the baking dish, ending with an egg‑cream layer. Bake for about 15 minutes until the egg‑cream sets.

    Meanwhile, finely roll the chives into small ribbons.

    When ready, remove the mille-feuille from the dish, sprinkle with chives and freshly ground pepper, and serve.
