Potato Gratin

Ingredients
- 1 Garlic clove
- 2 kg waxy potatoes
- 500 ml whipping cream
- 500 ml milk
- 50 g crème fraîche
- Salt
- Pepper (freshly ground)
- nutmeg
- 100 g grated cheese (e.g., Gruyère, Emmental)
- 1 sprig rosemary
- chili flakes
Instructions

Preheat the oven to 180°C with fan and top heat.

Peel the garlic clove and rub it into the baking dish. Wash, peel, and thinly slice or shave the potatoes. Layer them evenly in the dish. Whisk together cream, milk, cheese, and crème fraîche; season with salt, nutmeg, and pepper, then pour over the potatoes. The potatoes should be almost covered; adjust the liquid as needed.

Bake in the preheated oven for 40–50 minutes until golden brown. Test doneness by inserting a fork: it should slide through easily. Sprinkle with dried rosemary leaves and chili flakes before serving.
