Ingredients
- 300 g firm potatoes
- 150 g Carrots
- 150 g kohlrabi
- 100 g celery stalks
- 1 onion
- 2 tbsp Vegetable oil
- 800 ml vegetable broth
- Salt
- pepper (ground)
- 8 Nürnberger sausages
- 20 g clarified butter

Peel, wash and dice the potatoes, carrots and kohlrabi into small cubes. Wash, trim and slice the celery stalks into thin rings. Peel and finely cube the onion, then sauté it in a pot with hot oil until translucent. Add the vegetables, cook briefly, then pour in the broth. Season with salt and pepper and simmer over medium heat for 15 minutes.

Meanwhile cut the sausages into 2 cm pieces and brown them in a pan with melted clarified butter until golden on all sides. Add the sausage pieces to the soup. Taste the finished soup, ladle it into preheated bowls and serve.
