Cod Fillet on Sauerkraut
The cod fillet on sauerkraut from Spoonsparrow is an unusual but really delicious combination!
Ingredients
- 1 onion
- 2 red bell peppers
- 1 tbsp Olive Oil
- 500 g Sauerkraut
- 15 g tomato paste (1 tbsp)
- Salt
- Pepper
- 3 tsp sweet paprika powder
- 500 g Cod fillet
- 1 lemon (juice)
- 4 sprigs dill
- 4 sprigs Parsley
- 120 g cream cheese (30% fat content)

Peel and finely chop the onion. Halve, deseed, wash, and dice the bell peppers.

Heat the oil in a pot. Sauté the onion and paprika in it over medium heat for 4 minutes. Add the sauerkraut and sauté for 2 minutes. Pour in 100 ml of hot water, stir in the tomato paste, season with salt, pepper, and paprika powder, and bring to a boil. Reduce the heat and simmer the sauerkraut for 10 minutes.

Rinse the cod fillet, pat it dry, cut it into 4 pieces, salt it, and drizzle with 1 tbsp of lemon juice. Wash, dry, and chop the dill and parsley. Mix the cream cheese with herbs, salt, pepper, and the remaining lemon juice.

Spread the sauerkraut in a baking dish and place the cod on top. Spread the cream cheese over the cod pieces. Bake everything in a preheated oven at 200 °C (fan: 180 °C; gas mark 3) for 20 minutes.
