Potato Dumplings with Ground Meat Filling

- 1 kg starchy potatoes
- 100 g flour
- 2 Eggs
- Salt
- Pepper (freshly ground)
- 1 Shallot
- 1 tbsp butter
- 125 g bacon (well marbled, smoked, finely diced)
- 250 g mixed ground meat
- 2 tbsp breadcrumbs

Peel, wash, and cut the potatoes into small pieces. Boil in salted water for about 25 minutes, then drain, let steam off slightly, and press while hot into a bowl using a potato masher. Mix in flour and eggs, knead into a smooth dough, and season with salt and pepper. Peel and finely chop the shallot; sauté in hot butter until translucent. Combine the shallot, bacon cubes, ground meat, and breadcrumbs; season with salt and pepper. Divide the dough into tennis-ball-sized pieces, place a small amount of filling in the center of each, and shape into smooth round dumplings.

Bring 3 liters of salted water to a boil and cook the dumplings for about 20 minutes until tender, then stop boiling. Serve with a simple salad.
