Potato Dumplings

Ingredients
- 1 kg waxy potatoes
- old bread cubes
- 1 tsp clarified butter
- 100 ml milk
- Salt

Peel 500 g of the potatoes and steam them for about 30 minutes until tender.

Meanwhile cut the bread into small cubes and toast them in a little clarified butter until crisp.

Shave, wash and grate the remaining raw potatoes. Press the potato mash through a kitchen towel over a bowl to remove excess liquid. Let the liquid settle so the starch settles at the bottom. Gently crumble the dry potato mash and stir in boiling milk. Drain the liquid from the settled starch and add the starch back to the raw potato mash. Peel the freshly cooked potatoes and immediately press them into the mash using a potato masher. Mix everything well and season with salt. The mixture should be neither too firm nor mushy. Shape dumplings with damp hands, pressing in some toasted bread cubes at the center of each.

Bring salted water to a boil in a wide pot. Drop the dumplings into the boiling water and let them simmer on low heat for about 30 minutes.
