Ingredients

  • 500 g starchy potatoes
  • Salt
  • 300 g chicken breast fillet
  • 2 egg yolks
  • 2 tbsp freshly grated Parmesan
  • 2 tbsp butter
  • 1 tbsp chopped parsley
  • 1 tbsp flour
  • Pepper
  • Nutmeg (freshly grated)
  • 4 tbsp flour
  • 2 Eggs
  • 100 g white bread crumbs

Instructions

    Peel, wash the potatoes and cook them in salted water for about 30 minutes. Wash the chicken meat, pat it dry and process it through a meat grinder or a food processor into a fine paste.

    Drain the potatoes, press them with a potato masher and let them steam off. Mix with the egg yolks, Parmesan, butter, parsley and the chicken paste to form a dough that can be shaped. Add a little flour if needed. Season with salt, pepper and nutmeg.
