Potato Croquettes

Ingredients
- 500 g potatoes (starchy, boiling type)
- 2 tbsp flour
- 1 tsp garam masala
- Salt
- chili powder
- 2 tbsp fresh mint (chopped)
- 1 green chili pepper (chopped)
- 1 tsp fresh ginger (chopped)
- 1 onion (finely diced)
- 0.5 tsp garam masala (spice blend)
- 3 tbsp Flour
- oil (for frying)
- 200 g plain yogurt
- 2 tbsp coriander leaves
- Salt
- 2 tomatoes (diced)
- 2 spring onions (sliced)
Instructions

Wash potatoes and boil in salted water for about 25 minutes with skins on.

Drain and let cool slightly. Peel and mash with chili powder and garam masala until smooth. Add flour as needed to make the dough lightly workable but not crumbly.

Mix mint, green chili, ginger, onion, and garam masala for the filling.

Shape the potato dough into a log and cut into 16 equal thick slices. Press a shallow well in each slice and fill with 1 tsp of the filling. Bring the dough together over the filling and shape into croquettes. Roll each in flour and fry in hot oil (about 160°C) until golden brown, about 5 minutes, turning gently several times.

When the oil is properly tempered, bubbles will rise on a wooden stick held in it. Drain the croquettes on kitchen paper.

Mix yogurt with coriander and season with salt.

Combine diced tomatoes with spring onion rings and serve with the filled croquettes and yogurt sauce.
