- 2 tbsp lemon juice
- 2 slices whole grain bread
- arugula
- 1 Spring onion
- 1 tbsp chopped cashew nuts

Halve the avocado, remove the pit, scoop out the flesh and slice into thin strips. Drizzle with lemon juice and spread over the toasted bread. Trim the green part of the spring onion, cut into rings, and scatter over the bread along with arugula and cashew nuts.
