Ingredients

  • 100 g wild garlic
  • 3 egg yolks
  • 4 tbsp oil
  • Salt
  • freshly ground pepper
  • sugar
  • 4 medium russet potatoes (starchy)
  • oil for frying

    Wash and dry the wild garlic, then finely crush it.

    Whisk the egg yolks until frothy, then slowly drizzle in 4 tablespoons of oil while stirring (everything should be at room temperature). Stir in the crushed wild garlic. Season with salt, pepper, and sugar to taste.

    Wash the potatoes and cut them into long strips with the skin on. Briefly boil them in salted water, rinse under cold water, and pat dry thoroughly. Fry in hot oil (about 160°C) until golden yellow. Drain on paper towels and lightly salt. Serve with the wild garlic mayonnaise.
