Ingredients

  • 500 g waxy potatoes
  • Salt
  • paprika powder
  • 1 tsp herbs de Provence
  • 2 l frying oil (e.g., soy or rapeseed)

Instructions

    Peel the potatoes and grate them into thin slices. Cut into rectangles if desired. Soak the potato slices for 2-3 minutes, drain, and pat dry with kitchen paper or a clean towel.

    Heat the oil in a deep fryer or pot to 170°C, fry the potato slices in batches until golden brown. Remove with a slotted spoon and drain on kitchen paper. Season with salt, paprika, and herbs as desired.
