Ingredients
- 200 g pumpkin flesh (peeled, seedless)
- 400 g flour
- 3 tsp baking powder
- 1 tsp salt
- 3 eggs
- 170 g powdered sugar
- 2 tbsp oil
- 1 tsp grated lemon zest
- 1 kg fat (or clarified butter for frying)
- powdered sugar (for dusting)

Grate the pumpkin and boil with 100 ml water until tender, about 10 minutes. Let cool, then strain through a fine sieve. Sift flour with baking powder and salt into a bowl. Add grated pumpkin and eggs; mix into a crumbly dough. Sift in powdered sugar, add oil and lemon zest, and stir into a sticky dough over 3–4 minutes. Heat the fat in a large pot until hot (small bubbles appear on a wooden spoon handle).

Use a tablespoon to scoop small fritters from the dough and fry in the fat over medium heat until golden brown, turning once. Drain finished fritters on kitchen paper and dust with powdered sugar.
