Fruity Tomato Soup with Shrimp

Ingredients
- 800 g peeled and chunked tomatoes (canned)
- 1 Red Onion
- 2 oranges
- 2 tbsp olive oil
- 0.8 l vegetable broth
- Salt
- pepper (ground)
- a pinch of sugar
- cilantro leaves (for garnish)
- 200 g pre-cooked shrimp, deveined and peeled (except tail segment)
- 1 tsp fresh grated ginger
- 1 half lime (juice and zest)
- 1 chili pepper (finely chopped)
Instructions

Mix ginger, lime zest and juice, chili, and 1 tbsp. Combine with shrimp and let marinate covered for about 30 min.

Peel oranges and cut out the segments. Capture the juice and squeeze out remaining flesh.

Peel onion and slice into thin strips.

Heat oil in a pot and sauté onions. Add tomatoes and deglaze with broth. Bring to boil and simmer for about 10 minutes. Stir in orange juice, season with salt, pepper, and sugar. Place orange segments and remove from heat covered.

Cook shrimp with the marinade in a hot pan for about 2-3 minutes while stirring.
