- 400 g Jerusalem artichoke
- 400 g starchy potatoes
- Salt
- 250 g lukewarm milk
- 40 g Butter
- Pepper (freshly ground)
- nutmeg
- 8 slices breakfast bacon
- 1 apple (e.g., Boskop)
- 1 tbsp Lemon Juice
- 20 g butter

Peel, wash, and boil the artichoke and potatoes in salted water for 25 minutes. Drain, let steam off, then mash. Mix with milk and butter to a smooth purée; season with salt, pepper, and nutmeg. Fry the bacon in a pan until crisp.

Wash the apple, quarter it, core it, and slice thinly. Drizzle immediately with lemon juice and sauté in melted butter in a pan. Plate the mash on warmed dishes and garnish with apple slices and bacon pieces.
