Potato Casserole with Mortadella

Ingredients
- 800 g potatoes
- 2 Eggs
- 125 ml milk
- 150 g mortadella
- 2 tbsp parsley
- Salt
- Pepper (freshly ground)
- 2 Garlic cloves
- 2 tbsp oil
- 1 bunch herbs
- 50 g Parmesan
- 4 bell peppers

Wash the potatoes and cook them with skins in water. Drain and let cool. Dice the mortadella. Peel and finely chop the garlic. Heat 1 tbsp oil, fry the sausage and garlic while stirring. Mix parsley with the sausage pieces and set aside. Wash, halve, and clean the bell peppers. Slice into strips.

Peel the potatoes and cut them into thin slices. Preheat the oven to 220°C. Whisk eggs with milk, salt, and pepper. Layer the potatoes, peppers, and sausage mixture alternately in a baking dish, lightly salting the potatoes as you go. Pour the egg mixture over the layers.

Bake the casserole in the hot oven (center, fan 200°C) for about 30 minutes. Meanwhile wash and dry the herbs. Finely chop the leaves and mix with parmesan. Sprinkle over the casserole, drizzle with remaining oil, and bake for an additional 5 minutes until crisp.
