Potato-Carrot Mash

The Potato-Carrot Mash from Spoonsparrow is quick to make and delivers plenty of vital nutrients.

Ingredients

  • 600 g Carrots
  • 600 g waxy potatoes
  • Salt
  • 200 ml Milk (3.5% fat)
  • 1 tbsp butter
  • a splash of lemon juice
  • nutmeg
  • Pepper
  • 1 handful parsley

Instructions

    Peel, wash and roughly chop the carrots. Peel, wash and also roughly chop the potatoes. Put both into a pot, cover with salted water and bring to a boil. Cover and simmer over medium heat for 20–25 minutes.

    Drain the carrots and potatoes and let them drain. Return them to the pot, add milk and butter, and mash with a potato masher. Season with lemon juice, a pinch of freshly grated nutmeg, salt, and pepper.

    Wash, dry, shake off excess water, and chop the parsley leaves. Divide the potato-carrot mash onto four plates and sprinkle with parsley before serving.
