Potato Bites with Sour Cream

- 8 potatoes
- 1 EL oil
- Salt
- Pepper
- 150 g Sour cream
- 1 Spring onion
- mixed pepper
- Salt
- 1 tsp broth

Wash the potatoes thoroughly and cut them in half. Grease a baking dish or small tray with oil, season with salt and pepper, and place the potato halves cut side down on the tray. Bake for 25-30 minutes at 200°C (medium) until cooked. Meanwhile whisk the sour cream with broth and add salt if needed. Wash, trim, and slice the spring onion into thin rings. Crush the mixed pepper in a mortar.

Remove the finished potatoes from the oven, carefully lift them with a spatula, and place them skin side up on a plate. Spoon some sour cream onto each cut surface, sprinkle with pepper and spring onions, arrange four pieces per platter, stick a small wooden skewer into each, and serve with wine.
