Potato Sausage Stew with Gremolata

Ingredients
- 600 g firm potatoes
- 200 g zucchini
- 2 onions
- 3 sausages
- 3 EL olive oil
- 300 g canned diced tomatoes (canned)
- 300 ml Vegetable broth
- Salt
- pepper (from grinder)
- 5 sprigs parsley
- 2 sprigs marjoram
- 1 fresh lemon
- 1 red chili pepper
- 1 Garlic clove

Peel, wash and cut the potatoes into bite-sized pieces. Wash, trim and cut the zucchini into bite-sized pieces as well. Peel the onion and finely chop it.

Brown the sausages in a hot pot with oil all around, remove them and set aside. Sweat the onion in the drippings until translucent, add the potatoes and zucchini and cook briefly. Pour in the tomatoes and broth, season with salt and pepper, and simmer over medium heat for about 15 minutes.

Rinse the herbs, shake dry and finely chop the leaves. Wash the lemon hot, pat dry and grate the zest. Wash the chili, split lengthwise, deseed and finely chop it. Peel the garlic, finely chop it and mix with the lemon zest, chili and herbs.
