Potato and Kale Stew

The potato stew with kale from Spoonsparrow brings warmth and vital nutrients on cold days.

Ingredients

  • 800 g kale
  • 400 g Potatoes
  • 1 large onion
  • 3 bay leaves
  • 2 heaping tablespoons fine oatmeal flakes
  • 200 g pork bacon
  • 1 tablespoon rapeseed oil (for frying)
  • Salt
  • ground pepper

Instructions

    Strip the leaves from the kale stems and blanch them in boiling salted water for about 2 minutes, then drain and set aside. Peel, wash, and cube the potatoes. Peel and finely dice the onion.

    Coarsely chop the kale. Add it with the potatoes and onions to a pot. Cover with a little water, add salt and bay leaves, cover, and simmer for about 1 hour.

    Stir in the oatmeal flakes and cook together for 5 minutes. Dice the pork bacon finely, fry it in rapeseed oil in a pan, then mix into the kale stew, seasoning with salt and pepper.
