Green Goddess Salad

The Green Goddess Salad with its fresh 8-herb mix from FRoSTA is packed with nutrients, fiber and vitamins.

Ingredients

  • 1 handful kale
  • 1 head romaine lettuce
  • 300 g broccoli
  • 2 Spring Onions
  • 1 small avocado
  • 2 handful baby spinach
  • 1 pack FRoSTA (8-herb mix)
  • 2 tbsp Cashews (30 g)
  • 2 tbsp olive oil
  • 1 tsp Mustard
  • 1 tbsp lime juice
  • 5 tbsp water
  • Salt
  • Pepper

Instructions

    Wash and trim kale, romaine lettuce, broccoli and spring onions; cut into small cubes or pieces. Combine all in a bowl.

    For the dressing, wash and dry the spinach. In a blender combine avocado, 8-herb mix, cashews, olive oil, mustard, lime juice, salt and pepper; blend until smooth. If too thick, add a little water and blend again.

    Pour the dressing over the vegetables in the bowl, stir well and serve the Green Goddess Salad. Tip: For an extra protein boost, sprinkle feta or goat cheese on top of the salad. You can also prepare the dressing with 50 g canned white beans; simply rinse the beans and fold them into the mixture.
