Potato & Ground Beef Casserole

Ingredients

  • 800 g potatoes
  • 250 g carrots
  • 250 g kohlrabi
  • 3 tbsp oil
  • 500 g ground beef
  • 1 tsp dried thyme
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp chopped parsley
  • 1 leek stalk
  • 150 ml low‑fat whipping cream
  • 50 g grated Gruyère cheese
  • 4 eggs

Instructions

    Peel the potatoes, boil in salted water for about 25 minutes, drain, let steam dry and slice.

    Peel and dice carrots and kohlrabi; sauté in oil. Add ground beef and thyme, cook until browned, season with salt and pepper, stir in parsley.

    Trim the leek, cut lengthwise, wash thoroughly, then slice. Whisk cream with cheese and eggs.

    Layer the prepared ingredients in a greased baking dish, topping with potatoes and leeks. Pour the egg‑cream mixture over everything and bake at 180 °C for about 40 minutes until golden brown.
