Vegan Vegetable Stew

Ingredients
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 1 l vegetable broth (instant or glass)
- 1 small kohlrabi
- 200 g Green beans
- 200 g potatoes
- 200 g carrots
- 2 small stalks leeks
- 150 g Frozen Peas
- 1 tsp Marjoram
- 1 tsp bean herb
- Salt
- pepper (ground)
Instructions

Peel and finely chop onions and garlic. Peel carrots, potatoes, and kohlrabi and cut into cubes. Wash leeks, trim, and slice into rings. Rinse beans, trim ends, and cut into pieces.

Thaw peas.

Heat oil in a large pot and sauté onion until translucent, then add garlic, carrots, potatoes, and kohlrabi and cook briefly. Pour in broth and bring to a boil once. Add marjoram and bean herb to the broth and simmer for about 10 minutes, then add beans and leeks and cook another 10 minutes. Finally add peas and simmer for 2-3 minutes until tender. Season with salt and pepper and taste.
