Pork Tenderloin French Style

Ingredients

  • 2 Garlic cloves
  • 750 g pork tenderloin (from the shoulder)
  • salt, pepper
  • 1 tsp cinnamon
  • 1 tbsp Olive Oil
  • 3 shallots
  • 2 Bay leaves
  • 250 ml skimmed meat broth
  • 1 glass brandy (optional)

Instructions

    Peel the garlic cloves and cut them into long sticks. Skewer the pork roast with the garlic sticks and rub with salt, pepper, and cinnamon.

    Brown the meat on all sides in oil. Peel the shallots, add to the meat, and brown together. Add bay leaves, broth, and optionally brandy. Cover and simmer over low heat for about 1 hour.

    Remove the meat and slice into rounds. Meanwhile reduce the sauce slightly and serve alongside.
