Pork Roast with Tomatoes and Mozzarella

Ingredients

  • 750 g pork loin
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 200 g mozzarella
  • 2 Tomatoes
  • 20 g black olives (pitted)
  • 0.5 tsp Dried oregano
  • basil (for garnish)

Instructions

    Preheat the oven to 200°C fan.

    Wash, pat dry and slice the pork loin. Season with salt and pepper, then sear briefly in 2 tbsp hot oil on both sides. Slice the mozzarella. Wash the tomatoes, remove stems, and cut into slices. Slice the olives as well. Layer the meat, tomato, and mozzarella slices alternately in a greased baking dish. Sprinkle oregano and olives over the top, drizzle with olive oil, season again with salt and pepper, and bake for about 25 minutes.
