Pork Roast with Plum Filling

Ingredients
- 1 kg pork roll roast (skinless, prepped for cooking)
- Salt
- Pepper (freshly ground)
- 600 g blue plums
- 0.5 tsp ground cinnamon
- 0.5 tsp ground cloves
- a pinch of ground allspice
- 2 tbsp clarified butter
- 2 onions
- 0.25 head of celeriac
- 400 ml meat broth
Instructions

Preheat the oven to 180°C (350°F) with upper and lower heat.

Wash the pork, pat dry, spread out, salt and pepper.

Wash the plums, halve them, pit them, cut half into thin strips. Mix with half of the spices, distribute over the meat, roll up, tie with kitchen twine, and season again with salt and pepper.

In a roasting pan melt the clarified butter and brown the pork all around.

Remove briefly and set aside.

Peel the onions and cut into wedges. Peel the celeriac and cut into large pieces.

Add the onions to the pan and sauté, place the pork on top, pour in the broth, and roast in the preheated oven for 60-70 minutes, basting with broth repeatedly.

After half the cooking time add the remaining plums with spices and stir.

Remove the roast from the oven, untie the twine, slice into portions, and serve arranged with the fruit and vegetables on a platter.
