Savory Pork and Cabbage Pudding

Ingredients

  • 400 g pork mince
  • 400 g white cabbage
  • 1 tbsp chopped parsley
  • 1 Garlic clove
  • 1 Shallot
  • 1 tbsp butter
  • 1 tbsp flour
  • 250 ml milk
  • 1 tbsp Crème fraîche
  • 1 egg
  • 50 g grated cheese
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • butter (for the molds)

Instructions

    Wash, trim and finely shave the white cabbage. Blanch in salted water for about 5-10 minutes until firm, then shock in cold water and drain well.

    Peel and finely dice the shallot and garlic. Mix with the pork mince and parsley, seasoning with salt and pepper.

    Heat butter and flour in a pot, stir and let foam, then whisk in milk and crème fraîche. Remove from heat, let cool slightly, fold in cheese and egg, and season with salt, pepper and nutmeg.
