Ingredients

  • 2 kg pork roast (with rind)
  • salt, freshly ground pepper
  • 10-12 cloves
  • 2 tbsp sharp mustard
  • 2 tbsp honey
  • oranges for garnish

    Preheat the oven to 200°C (gas: level 3). Score the rind of the pork roast crosswise. Rub the meat with salt and pepper. Insert the cloves into the scored lines. Place the roast in a fat pan and bake for 2½ hours. After 45 minutes, pour a little water over it. During roasting, baste with fond.

    Whisk mustard with honey. Baste the roast frequently with this mixture during the last 20 minutes. Let it rest for at least 15 minutes before slicing. Plate with orange garnish.
