Pork Roast with Apples

Ingredients

  • 800 g pork neck
  • 1 onion
  • 2 Garlic cloves
  • 0.5 bunch sage
  • 0.5 bunch thyme
  • 2 tbsp fennel seeds
  • 2 tbsp mustard seeds
  • 150 ml red wine
  • 250 ml meat broth
  • 4 small tart apples
  • 4 red onions
  • olive oil
  • black pepper (ground)
  • Salt

Instructions

    Rub the pork with salt and pepper. Peel and finely dice the onion and garlic. Chop the herbs finely and mix with onion, fennel seeds, mustard seeds, and garlic. Stir in 2 tbsp oil. Coat the pork with this paste and marinate covered overnight.

    Preheat oven to 180°C. The next day sear the pork in 3 tbsp heated olive oil, pour in red wine, and roast in the hot oven for about 1 hour. Baste repeatedly with meat broth. Wash the apples. Peel only the outer skin of the onions. Add whole apples and onions 20 minutes before the end of cooking. Drizzle with a little broth and continue roasting.
