Herb Roast

Ingredients
- 2 kg pork shoulder
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 3 cloves garlic
- 4 shallots
- 2 tbsp olive oil
- Salt
- ground pepper

Wash and pat the meat dry. Peel the garlic and press 2 cloves through a garlic press. Rub the meat with the garlic, salt, pepper, and place it in a roasting tin. Add the halved shallots. Drizzle with olive oil and roast in a preheated oven at 180°C (under and over heat) for 30 minutes.

Pour 0.5 l water into the pan, add the remaining half cloves of garlic, one sprig of rosemary, and two sprigs of thyme. Continue roasting for about 1.5 hours, periodically spooning the cooking liquid over the meat and adding more water if needed. Finally raise the temperature to 220°C, allowing the meat to brown. Remove the remaining herbs, finely chop them, sprinkle over the roast, and serve hot or cold as desired.
