Pork Roast Leek Gratin with Cheese

Ingredients
- 2 stalks leeks
- 2 tbsp butter
- Salt
- pepper (ground)
- 100 ml dry white wine
- 500 g pork roast (cold from yesterday)
- 400 ml Vegetable broth
- 250 ml whipping cream (at least 30% fat)
- 2 Eggs
- 100 g grated Emmental cheese
- 75 g grated cheese (e.g. Parmesan)
- 2 tbsp chives rings

Preheat the oven to 180°C with fan and top heat. Wash, trim, and cut the leeks diagonally into rings. Sauté in hot butter for 1-2 minutes, season with salt and pepper, deglaze with white wine, then remove from heat. Slice the pork roast and layer it with the leeks (without liquid) in a baking dish. In the pan, pour in the broth and bring to a boil. Add the cream and reduce until about half thickened. Remove from heat, let cool slightly, then whisk in the eggs and Emmental cheese. Pour over the meat‑vegetable layers, season with salt and pepper, and sprinkle with Parmesan. Bake in the oven for about 25 minutes until golden brown.
