Pork Roast in Garlic Bundle

Ingredients

  • 1.5 kg pork roast (with rind)
  • 4 onions
  • 4 apples
  • 200 g dried apricots
  • 2 cloves garlic
  • 2 tbsp honey
  • 0.5 tsp juniper berries
  • 0.5 tsp dried thyme
  • 0.5 tsp Peppercorns
  • Salt
  • 150 ml meat broth

Instructions

    Wash the pork roast, pat dry and score the rind in a diamond pattern.

    Peel onions and garlic, roughly cube them.

  3. 3.

    Peel apples, quarter them, remove cores and cut into wedges.

  4. 4.

    Coarsely chop apricots.

  5. 5.

    Crush juniper, thyme and peppercorns in a mortar and mix with melted honey.

  6. 6.

    Fill the garlic bundle with onion, apple, apricot and garlic as instructed, place the meat on top, spread the honey‑spice mixture over the rind, season with salt and pour in meat broth. Seal the bundle and pierce it several times.

    Roast in the oven at 180 °C for about 90 minutes.
