Ingredients
- 400 g spelt whole‑grain flour
- 200 g butter
- Salt
- 2 Eggs
- 3 tbsp whole‑grain breadcrumbs
- 200 g ground pork
- 200 g Ground beef
- 2 shallots
- 2 Garlic cloves
- 0.5 tsp white pepper
- 0.5 tsp rosemary
- 0.25 tsp allspice
- 1 pinch nutmeg
- 1 pinch Cinnamon powder
- 1 egg yolk

Sift the flour into a bowl and make a well in the center. Add butter pieces, salt, 1 egg, and 2 tbsp water to the well. Quickly knead into a smooth dough. Wrap in cling film and chill for about 2 hours.

In a bowl combine 1 egg, breadcrumbs, ground pork, and ground beef. Peel and finely chop shallots and garlic cloves; add them to the meat mixture along with salt, pepper, rosemary, allspice, nutmeg, and cinnamon. Mix well.

Roll out roughly two‑thirds of the dough to about 4 mm thickness and cut into 12 pieces. Line the buttered depressions of a muffin tin with these dough squares and spread the meat filling on top. Roll out the remaining dough, place it over the filling, press down, brush with egg yolk, and cut a round hole in the center.

Bake the pork pies in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for about 45 minutes. Remove, let cool slightly, and serve warm.
