Blinis with Smoked Salmon

Spoonsparrow blinis with smoked salmon taste deliciously savory and are easy to prepare!
Ingredients
- 150 g buckwheat flour
- 150 g wheat flour
- 1 pinch salt
- 20 g yeast (½ cube)
- 300 ml lukewarm milk
- 2 tbsp liquid butter
- 2 egg whites
- butter fat (for frying)
- 150 g crème fraîche
- 400 g smoked salmon (sliced)
- 2 tbsp chives

Separate the eggs. Mix the flours together. Dissolve the yeast in the milk and stir it into the flour mixture with the liquid butter and salt; cover and let rise in a warm place for about 20 minutes.

Beat the egg whites until stiff and fold them into the dough before baking.

Heat some butter fat in a pan, drop a tablespoon of dough into it, and fry each side for about 2–3 minutes until golden brown; keep warm.

Serve the blinis topped with smoked salmon and a dollop of crème fraîche, sprinkle with chives, and enjoy.
