Ingredients
- 600 g fresh (lean) pork belly
- 0.5 tsp crushed cumin
- 2 Garlic cloves
- Salt
- Pepper (freshly ground)
- 2 tbsp sweet paprika powder
- 1 kg waxy potatoes
- 2 onions
- 2 tbsp clarified butter
- 2 tbsp white wine vinegar
- 400 ml hot meat broth
- 1 small can peeled tomatoes
- 50 g sour cream
- 2 tbsp chopped chives

Cut the pork into 2.5 cm cubes. Peel and chop the garlic.

Season the pork with salt, pepper, cumin, garlic, and 1 tbsp paprika.

Peel, wash, and cube the potatoes. Peel and roughly dice the onions.

Heat clarified butter in a braising pot, add the pork and sear over high heat. Add the onions and roast briefly. Stir in the remaining paprika, then pour in vinegar and broth; add the potatoes and tomatoes, crush the tomatoes, and simmer for about 25 minutes, tasting as you go.

Serve the potato goulash on a plate and sprinkle with chives. Offer the sour cream on the side.
