Pork Feet Aspic with Onions and Pickled Cucumbers

Ingredients
- 1 onion
- 6 pickled cucumbers
- 12 pork feet
- Salt
- 1 tsp peppercorns
- 2 Bay leaves
- 100 ml vinegar
- 2 onions
- 2 carrots
- 2 cloves
- 50 ml dry white wine

Wash the pork feet thoroughly, then briefly place them in boiling water, drain, rinse again and put them in a pot. Cover with cold water and bring to a boil. Skim off any foam that forms repeatedly. Then add the spices, 1 tablespoon salt and the vinegar. Peel and halve the onions and carrots. Add the white wine to the broth and let everything simmer slowly for about 2.5 hours.

Afterwards remove from heat, allow it to cool slightly and take out the pork feet. Separate them, roughly cube, and distribute evenly in a baking dish.

Strain the broth through a fine sieve, bring back to a boil, season and pour over the pork feet. Let it cool and refrigerate overnight until set.
