Ingredients

  • 1 handful Arugula
  • 300 g Low-fat quark
  • 2 tbsp olive oil
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 2 slices thick wood-fired bread (halved)
  • 1 small handful dandelion flowers (for garnish)

Instructions

    Wash, rinse, and dry the arugula; roughly chop it, leaving a few stems for garnish. Whisk the quark with olive oil and lemon juice until smooth, fold in the arugula, and season with salt and pepper.

    Spread the mixture onto the four bread halves and serve garnished with dandelion flowers and remaining arugula.
