Ingredients

  • 1 roll puff pastry (ca. 300 g)
  • 4 tbsp sugar
  • 150 g raspberry jam
  • 20 ml raspberry liqueur

Instructions

    Roll out the puff pastry and place it on a surface dusted with sugar. Mix the jam with the raspberry liqueur and spread onto the dough, leaving about 3 cm free on each narrow side. Roll the dough from each narrow side toward the center to form a double roll. Using a very cold knife cut slices about 1 cm thick. Rinse a baking sheet with cold water and place the palmiers on it. Shape slightly if needed and chill for 15 minutes.

    Preheat the oven to 220°C (425°F) fan‑fry. Place the tray in the oven and bake for about 15 minutes, turning 2–3 times. Remove immediately from the tray to prevent sticking. Best enjoyed fresh.
