Ingredients

  • 500 g mascarpone
  • 2 EL sugar
  • 1 packet vanilla sugar
  • 1 EL raspberry liqueur
  • 40 g pistachios
  • 1 EL powdered sugar
  • 200 g Raspberries
  • 100 g Blackberries
  • 100 g currants
  • 200 g Blueberries
  • 200 g strawberries
  • 2 EL currant jelly
  • 40 ml currant juice
  • oranges

Instructions

    Beat mascarpone with sugar, vanilla sugar and liqueur into a loose cream. Chill. Slice pistachios into rounds.

    Strip stems from currants. Wash, clean, dry all berries. Chop strawberries according to size.

    For the glaze whisk currant jelly with currant juice and orange juice until smooth. Spread glaze over berries, stir lightly and let rest about 30 minutes.

    Fill mascarpone cream into four glasses, serve with berry salad and garnish with pistachios and powdered sugar.
